Since is scallop season here in Florida, I thought it would be great idea to BBQ some seafood. This is a really simple recipe, but very delicious. It is important that you get some fresh shrimp and scallops from a fish market or a good grocery store. They need to be a good size so that they don’t fall apart on the grill.
Recipe:
- Shrimp
- Scallops
- Snap Peas
- Bacon
- Your favorite BBQ sauce
- Hot sauce (optional)
First you take the scallops and wrap around a snap pea and a slice of bacon, then you poke a toothpick through it to hold it all together. If the scallop is too big then you cut it in half. The snap pea balances the softness of the scallop with some crunch and the bacon gives it wonderful flavor.
After you clean the shrimp you can wrap in bacon or just leave as is. We ran out of bacon so we grilled it without it, but it does taste better wrapped in bacon. Next, you take your BBQ sauce and mix some hot sauce in it if you like. Cover the shrimp and scallops with the BBQ sauce and leave some on the side for brushing while you grill. Grill and Enjoy! In my family these dishes don’t last long and we end up counting toothpicks at the end to see who ate the most.
